• Fried Plantain cakes

    This is an adaptation of something I used to eat back home, West Africa.  Short and sweet.

    Ingredients:

    4 over riped Plantains, or banana will work as well.
    3 to 4 cups of Gluten Free Flour Mix of your choice Or Adzele's All Purpose GF Mix
    Oil to fry


    Directions

    1. Peel the plantains and mash them (a potato masher will do just fine)
    2. Add the flour, first 3 cups then, slowly add the last cup until the mixture can form a ball in your hand.
    3. Form a small ball of the mixture in your hand and then flattened. Make more until the dough mixture is finished.
    4. Heat the oil of your choice in a frying pan at medium heat.
    5. Place as many formed dough in the pan and fry until brown on each side. Approximately two minutes.
    6. Removed it from the pan and let it rest on a plate covered with napkins ( to soak up left over oil)
    7. Serve for lunch with vegetables and hot dogs or serve it by itself for snack in the afternoon.
