Gluten Free WAFFLES
Ingredients:
1 tea spoon of salt
1 tea spoon of baking soda
2 table spoon of raw organic sugar or brown sugar (I do not use much sugar in my cooking, so most of the time it is not that sweet. So if you have a sweet tooth then, please feel free to add more sugar)
3 table spoon of flaxseed added to 1/4 cup of warm water
1/2 cup of grape seed or olive oil
1 cup of apple sauce
1/4 cup of really warm water
2 teaspoon of baking powder
*1/4 cup of agave. Most of the time I use less than that. Especially when I already added the brown sugar.
1 and 1/2 cup of warm water
*If you are using these waffles as sandwiches, as I often do, use less sugar and I add salt to taste, maybe even some garlic, oregano...whatever you are in the mood for.
Directions
In a large bowl combine ingredients from flour to baking soda. In a separate bowl, pour in the room temperatured apple sauce and add in the rest of the ingredients. This is your egg replacer, mix well and then pour it in the bowl with the dry ingredients. I like to add extra fiber to the this so if you like, take the flaxseed and add the warm water. Let it seed for two minutes or so, until the water is absorbed, then add it to the mixture. First, add in 1 cup of warm water, mix well. The consistency of the waffle battle need to be looser compared to pancakes. So, if you need more water, just add it a little bit at a time; add the remaining 1/2 cup of warm water.
Pour it 1/4 cup at a time or per direction of your waffle maker.
Voila, now you have GF waffles for your breakfast or for sandwiches. You can serve them with fruit of whatever you like. Bon appetit!
