• Mimi's Rice Burger

    This one is my daughter's creation. They all insisted that I post it. So here we go.

    She has food sensitivity to chicken and most of the time for lunch she gets beef burgers. I use a brown rice gluten free bread with the burgers for them but she says it hurts her stomach. So one day, she decided to cover her burger with rice.  So now, we have Rice Burger.  I usually serve lunch with broccoli or sliced fruits.

    Ingredient: 
    Rice
    Burger

    Direction: 
    It is pretty simple. For the burger, I just used frozen All Natural Angus Burger from Trader Joe. Cook your rice normally, in the rice cooker or over the stove. Let it cool, then scoop 3 large spoons full and using your hand or a small bowl, pat it into a shape of a burger bun and put it on top of your burger. Repeat to cover the other side of the burger...and you have Mimi's Rice Burger. Warning, it may fall apart a bit.

    TIP: I have not tried this yet, but if you take one of those burger press, and put the rice in it, and set it atside for a bit, it will hold better. You will also have a better chance with a stickier rice.
