PEA SOUP - the kids love this one
Ingredients
A bag of organic frozen peasA large parsnip - cut into bite size pieces
Half of fennel - cut into bite size pieces
Peel fresh ginger about the size of half of your thumb
Tea spoon of black pepper
Tea spoon of Turmeric
Tea spoon of salt - to taste
Tea spoon or dry oregano flakes (Fresh one will be better)
Tea spoon of minced garlic
Small shop onion
2 table spoon of olive oil.
2 -3 cups of water - depending on how you like your soups. I like mine thick.
A food processor (Blender)
Direction
1. In a medium sized pot, first add the oil, onion, garlic, black pepper, salt, oregano, turmeric, ginger.
2. Mix around for couple minutes
3. Add cut fennel, cut parsnip
4. Stir of two minutes
5. Then add peas, and stir.
6. Add two cups of water, or enough to cover the vegetables in the pot.
7. Let it cook at medium to low heat for 30 minutes
8. Let it cool down for a bit
9. Pour it into the blender and blend it to desire consistency
10. Pour it back in the pot add a cup of water, or to desired thickness.
11. Let it simmer for 5 minutes
12. Serve it nice and hot.
Last but not least, you can add whatever you want to it. This time I added, plantain chips and chicken.
