    Spinach and Kale Stew
    What to eat, when you cannot eat anything. 

    Every now and then, my stomach gets too sick to handle food, well I should say any form of starches. When that happens, I have a few options, more like two or three. 

    One of the them is bone broth. However, if I do not have any at hand and  I am starving and do not have the HOURS that bone broth requires, I make kale and spinach stew with chicken. It really does taste good and it is healing to the stomach and I don't starve. 

    It is also an adaptation of a sauce, Gboma or Ademe. We used to it with something we call, Akoume, made with corn flour.

    Ingredients:
    Frozen Organic Kale
    Frozen Organic Spinach
    3 carrots
    1/2 onion
    tea spoon of salt
    tea spoon of oregano
    a little piece of ginger, peeled 
    tea spoon of garlic
    4 to 5 Organic chicken legs. Whatever uncooked chicken pieces with bones that you have available. It is OK to use a cooked one, as long as it has bone.
    2 table spoon of olive oil

    Directions:
    Put oil in a sauce pan. Add the onion (cut in pieces) and the seasoning listed or what you prefer or have at hand. Add the chicken. Stir and let cook for a bit, until it is well mixed and the onion is beginning to caramelized. Add in the peeled and cut in pieces carrots and the fresh ginger. Let it cook for couple more minutes and then add in the Kale and Spinach, stir. Cover with two cups of water and let it cook for half an hour. Stir it at that point, make sure the taste is to your liking, if not, adjust seasoning to accommodate. Add water if needed (you want it to be some of a stew, meaning less water, thick and heavy; at least that is how I like mine). Cover again let it cook on simmer for an hour. When it is done, it is time to eat. 
    Remember no starch!
