    Jelly Tart

    Ingredients

    3 cups of Adzele's Gluten Free Teff Flour Mix 2 with Brown Rice
    (3cups of Sorghum flour, 2 cups of Brown Rice flour, 2 cups of Teff Flour, 2 cups of Arrowroot four)

    Apple Sauce Egg Replacer
    (1 cup of apple sauce, 1/2 cup of olive oil , 1/4 of warm water, 1 table spoon of baking powder, mix well before adding to flour)

    1 tea spoon of baking soda
    1/2 tea spoon of salt
    2 table spoon of Agave
    2 table spoon of organic brown sugar if desired
    1 cup of warm water
    1/2 cup of flour set aside to help roll the dough
    Any type of jelly you like
    1/4 cup of olive oil for the tart

    Directions


    The Dough

    Put 3 cups of Teff mix in a large bowl and set aside, add the baking soda and salt. If using regular sugar add it to the flour mix.
    Prepare the applesauce egg replacer mix in a medium size bowl. Make sure the apple sauce is room temperature and that the water is really warm. Add the Agave to the liquid.
    Mix the wet ingredients to the dry ingredients. You want a dough like consistency. If needed, begin to slowly add the cup of warm water until desired consistency is reached.
    Set aside and cover for 30 minutes

    The Tart


    Spread parchment paper on a table. Spread generous amount of  flour over it. Take half the dough knead it a bit and then roll it in a circle. Don't forget to spread some flour on the rolling pin before you start. Here, I just used a regular water glass, spread flour over the top, push it down on the dough and  cut out a circle. Cut out another circle right next to the one you just made. Set the circles aside on a prepared baking pan. Keep going until you cut out as much circle as possible. Add the left over dough to the other and roll flat again and start cutting out some more circles. Bunch together the left over dough into a ball, knead, and roll again and cut out as much circle you can.


    The Jelly

    Set oven to 350 degrees
    Put grape jelly or apricot, strawberry...whatever jelly you preferred inside, right in the middle of the circle. Now, we are going to make a triangle shape. Picture a triangle in the circle and fold it along the three lines. You should still be able to see the jelly in the middle. Brush some oil over it (the folded sides). Do the same thing for the rest of them.
    Place it in the oven for 15 minutes.
