Parsnip Mash
So, what do you do when you cannot eat potatoes?...you make Parsnip Mash.Ingredients
3 Organic Parsnips
1 teaspoon of garlic
1 teaspoon of ginger
1/4 of a small onion
1/2 teaspoon of oregano flakes 1/2 teaspoon of thyme
2 table spoon of oil
2 cups of water
1/2 salt
Drain, add garlic, ginger, onion, oregano, thyne, oil and blend together with a food processor (blender). Put it back on the stove and let it simmer for 5 minutes. Serve.
Serve with Kale
A bag of organic frozen kale
1/2 of onion
1 teaspoon of garlic
1 teaspoon of salt
1 teaspoon of black pepper
1 cup of water
In a pot add the olive oil, and the onion with the garlic, black pepper and salt. Cook the onion, stir frequently until it starts to caramelize. Add the kale, stir it into the mixture for couple of minutes. Add the water and cover. Let it cook until the kale is at your desired texture. For me, that would be well cooked but not too tender, about 20 minutes on medium to low heat.
Serve with any meat of your choice. Here, I served it with Roasted Pork (not one of my favorites, but my husband like it).

Clean and peel the parsnips, cut them into bite size pieces, add water and salt, cook till tender.Drain, add garlic, ginger, onion, oregano, thyne, oil and blend together with a food processor (blender). Put it back on the stove and let it simmer for 5 minutes. Serve.
Optional: You can also add cauliflower to this. The taste and smell of parsnip can be an acquire taste for some.
