Although, I got sick from the cake, I was inspired by the fried zucchini appetizer I couldn't it and decided to go home and make a gluten and dairy free version of it.
GF Fried Zucchini
1/3 cup of Adzele's All Purpose GF Flour
3 zucchini (sliced and cut in half)
1/4 cup of GF Rice Cereal crumbs
1/2 salt
1/2 of black pepper
1/2 of curry (optional)
1/3 cup of rice milk (or coconut cream or milk if you can have it)
1 cup or more of oil (depending on your frying pan)
Directions
Mix the seasonings salt, pepper, and curry (and whatever else you like) with the flour and the cereal crumbs and set at side. Wash the zucchini, cut it in half then slice side ways, discard the first and last cut, continue with the other two or how ever many more you are frying. Set at side. Prepare a frying plan and add in the oil you want (not olive oil) at medium heat. Either grape seed oil or rice bran oil, something I recently discovered in Trader Joe. Take a shallow plate or bowl and put your milk in it. Take the zucchini, place it in the milk and wet it, then place it in the flour and cereal mixture, make sure that it is all cover by it. Then place it in the *hot and ready frying pan. Fry until it is brown (about two minutes) then turn it over for the other side and fry for about another minute. Take a plate and place a layer of paper towels and put the fried zucchini on it to soak out the oil. Continue until all the zucchinis are fried.
Served with arugula pesto or whatever you like. I have to say I was pleasantly surprised because the kids loved it and asked for seconds.
*Tips: How do you know the oil is ready to fry?
1. Back home we will put a little piece of onion in it. When it gets brown then we know the oil is ready. To top it off, the onion flavors the oil.
2. You can also place the end of a wooden cooking spoon in the oil and if small bubbles starts to form around it then the oil is ready.
3. I don't like this one, but you can wet your hand and then shake it off at the oil so some of the water land in the it. If you get a reaction (popping, oil jumping off the pan) then it is ready. Stay clear of the pan while this is happening.
