• Spinach Rice Balls

    This is one is very simple and you can serve it for lunch or snack.

    Ingredients

    4 cups of rice ( you can cook less rice, 2 cups or so, what ever suits your family need)
    1/2 a bag of organic frozen spinach (you can use the whole bag depending on how much you like spinach)
    2 table spoon of oil
    1/2 tea spoon of salt
    Any other seasoning you prefer (to add to the taste)
    4 cups of water plus 1/2 a cup of water

    Direction


    Put the rice, salt, 1 table spoon of oil, other seasoning, spinach in the rice cooker and add the indicated amount of water you need (according to the rice you have) and then add the extra 1/2 cup of water to it, we want it to come out mushy. Let it cook, stir it often to make sure that the spinach is well mixed.  When done, turn off the rice cooker and let it cool down. Meanwhile, prepared a baking sheet lined up with foil and spread the remaining oil evenly on it. Turn on the oven to 350 degrees.

    Once the rice is cool, take a large spoonful and roll it in your hand into the shape of a small ball. Continue until all the rice are rolled and placed on the sheet.

    Bake for 20 minutes - let it cool - and serve. Or pack it for snack
