• Yellow Rice with Peas and Carrots

    Ingredients: (organic, especially the chicken)

    3 cups of rice
    2 table spoon of oil
    a small package of chicken breast
    half of a medium onion cut into pieces
    1 tea spoon of turmeric
    1 tea spoon of salt
    1 tea spoon of garlic
    1/2 a tea spoon of ginger
    1/2 a tea spoon of cumin
    1/2 a tea spoon of black pepper
    1/2 a cup of water or broth
    A defrosted bag of frozen peas
    4 carrots, peeled and cut into pieces

    Direction:

    When making stir fry,  I usual cook my rice in the rice cooker and then add it to the mix. So cook your rice as directed with your rice cooker or just cook it over the stove. While the rice is cooking, clean and cut the chicken breast into pieces. In the pot, add oil and the onion, stir for about 2 minutes then add the seasonings, mix well then add the chicken. Stir and let it cook at low to medium heat. If needed add 1/2  a cup of water of broth and cover for about 5 minutes. Then add the peas and carrots, stir and cook for about 5 minutes. Once you are sure that the chicken and the vegetables are cooked to your liking, add the cooked rice one cup at a time (just a bit at a time) and stir in between each scoop to make sure that the rice is mixing well with it. After you add all the rice and it is well mix, cover for two minutes and you are done!

    Sorry people, I made it mistake and put slow cooker while I meant RICE COOKER. So you have the option to cook the rice in a RICE COOKER
